Gluten Free Desserts, Baked With Love by Chef Katie


By David DiPino The Pineapple Contributing Writer Local baker Katie Eves, C.P.C., started baking gluten free desserts for her sister Jessica who has Celiac disease, an autoimmune disorder that can cause discomfort and pain within the digestive system brought on from a gluten strain found in wheat. “I wanted her to enjoy eating delicious desserts again,” Eves, a certified pastry chef said. Family members and friends enjoyed the gluten free pastries with Jessica and soon Chef Katie was getting calls and texts for orders. With a total of seven years in the restaurant business, including a two-year stint as a gelato maker, and a year-and-a-half as the pastry chef in charge of two successful restaurants in Delray Beach and Boca Raton, Chef Katie decided to take the chance on her dream of having her own business. Besides the phone orders from family and friends, she was thinking of a venue to market the idea of her gluten free cookies and cupcakes, pastries, and regular cupcakes, all sweets she bakes with love. Last season, the Delray GreenMarket also took a step in a new direction when they moved from Southeast Fourth Avenue to Old School Square Park located just north of East Atlantic Ave. between 96 NE Second Ave. (entrance to Pineapple Grove) and 51 N. Swinton Ave. (Delray Center for the Arts at Old School Square). The Delray GreenMarket was started in 1996 by the Community Redevelopment Agency who remain its main sponsor as well as the City of Delray Beach. Chef Katie contacted Delray GreenMarket manager Lori Nolan, and began the application process. Once approved, Chef Katie built a small working budget and obtained tables and a commercial white tent, staples of a GreenMarket vendor’s necessities. During last season’s 17th Annual Delray GreenMarket, pastry Chef Katie debuted her new business Love, Katie Kakes. Her new business focused on gluten free and regular sweets. Each Saturday she set-up her tent, lined her table with a pink and white table cloths, and attached clothes-pinned mini chalkboards with the prices. She also placed magnet signs to the tent’s arms with the prices of the goodies and cupcakes and her pastry goods were showcased nicely in decorated brown wicker baskets. She introduced herself to the community each week, built local clientele and began to receive special orders for parties and events. Most importantly, the Delray GreenMarket gave Chef Katie a chance as a woman entrepreneur. Love, KatieKakes Delray GreenMarket menu regularly included Gluten Free Snickerdoodle Cookies, Gluten Free Chocolate Cookies, Gluten Free Chocolate Cupcakes with Chocolate Crème, Vanilla Cup Cakes with Vanilla Buttercream and Gluten Free Peanut Butter Cupcakes with Peanut Butter Crème. Her regular sweets menu at the GreenMarket included Red Velvet Cupcakes with Marshmallow Buttercream, Carrot Cupcakes with Maple Buttercream, Vanilla Cupcakes with Vanilla Buttercream and Chocolate Cupcakes with Chocolate Butter Crème. Each of Love, KatieKakes gluten free cupcakes come in a white box with a clear window to see the cupcake and tied with pink ribbon, and the regular cupcakes come in pink boxes with a clear window and tied with white ribbon, great for an event or birthday party. Cupcakes are priced at one for $3 or two for $5. At the GreenMarket, Chef Katie has the chance to meet her customers face-to- face in a non-rushed atmosphere. At last year’s Delray GreenMarket, that allowed her to make business relationships with local parents, business owners and event planners, which turned into gluten free special cake orders, cupcake orders and custom dessert orders for her clients. Those orders continued long after the GreenMarket ended, enabling Chef Katie to grow her business year round. This year Chef Katie is ready to try out some new menu items at the 18th Annual Delray GreenMarket, beginning on Saturday, October 19, and continuing through Saturday, May 10. Market hours are each Saturday from 9 a.m. to 2 p.m. at Old School Square Park. “I’m so excited to be at the GreenMarket this year during the Fall Season, which brings many opportunities for themed baking, including the use of pumpkin, one of my favorite ingredients to work with. This is my favorite time of the year so I’m excited to try out some new things at the GreenMarket,” Chef Katie said.
